Do all of the GT-40 and the GT-40p head have the larger holes for the bigger head bolts? To where you need to run the the adapter washers to
run them on a 5.0?
I found a set of the GT-40 3bar heads but they have the big bolt holes

I know for a fact that the gt40p heads do NOT have larger head bolts, and I am pretty sure that regualr gt40s do not have larger head bolts either. The only exception might be gt40's from a lightning since it had a 351.
The heads that have larger head bolts are the DO0E heads on 351's

I just did the swap on my 94 the heads had bigger holes but nothing is really required but new head bolts
