The difference is essentially the speed you'll be able to go in each gear. The higher the numerical value for the rear end, the lower the speed each gear will be able to reach. Generally speaking, the higher the numerical value for the gear, the better your acceleration will be - however you'll have to shift more. If you're a slow shifter/bad shifter, you're not going to want to do that.
With a numerically higher gear, you're also less likely to be caught in a bad spot for your car to accelerate from on the street.
Example in my 03 cobra it has 3.55's stock (but has a different gearbox & redline than your car, so my speeds are going to be different)
1st = 45 mph, 2nd = 72mph, 3rd = 105mph(?) 4th = 130mph
If I put in a set of "shorter gears" (numerically higher), then those speeds would come down, and the speed that each gear covers is reduced.
For arguments sake (I'm making these numbers up), we'll pretend if I put in
3.73's or something, my car's gear speed would be
1st = 40mph, 2nd = 66mph, 3rd = 99mph, 4th = 123 mph
Now with the new "gears" (really just the final drive ratio, rather than new gear ratios for each individual gear), my car would accelerate through each gear a little bit quicker than it would with the stock gears, and now if I'm going from a 35mph roll, 2nd gear would be much more effective, as the RPM would be higher at that speed than it would with the stock gears.

Short and simple; higher gear # means higher RPM at any given speed. The higher the gear number, the greater this effect. You'll also have to get your speedometer recalibrated if you do gears.

Somebody with a fox or with experience will be able to tell you better than me - but what I listed above should help you with your decision. Particularly the link.
If you don't mind shifting more and having the car cruise on the highway at much higher engine speeds, then something that aggressive would be good. There are trade offs with gears that you have to take into account and see what your priorities are. gas mileage, cruising RPM, acceleration, shifting, etc. All that gets gets changed with gears.
If you're looking for the best thing for "street racing" you might get some different answers depending on how you like to race. From a roll? What speed? from a stop? etc.

My car was an AOD with 4:10 gears. I think this is the perfect gear for an AOD.
My car is now a T5 and I'm not liking the 4:10's. Especially on the street. I haven't been to the track since the change so I don't know how it'll do.
I'm thinking of going with 3:55's.
As for the street racing, I'll spare you the lecture except to say, take it to the track.

i'm using 3:27s... cuz i wanna keep some highway speed LOL after i built my engine the stock 2:73s didn't take long to pop btw-i have an extra set 3:27s if anyones looking
