Is there supposed to be a hole on the front of the e7's just like the hole on the back for the EGR tube? Mine seem to have one on the front and the back. I'm guessing the fronts need plugged too?

Yes, the hole in the front is supposed to be there. When you bolt the acessories to the front of the engine, the bolts will plug the holes. Obviously if you plan to eliminate some of the factory acessories and are still left with the holes, you'll just need to find bolts that fit them to plug them up.
That's strange. My bolts for the Idler pulley/alternator bracket will not fit in the smog hole on that head. I didn't havea bolt in the other side with my A/C bracket(unless I lost it). Either way I would have to drill out both brackets to make a large enough bolt fit.... I'm confused lol.

On the driver's side, the long rod that the power steering pump hangs on threads into a hole and one of the bolts for the alternator bracket goes in the hole on the passenger side. Are the holes too big fro your bolts? If so, there is a threaded insert that screws into the head that has a smaller threaded hole for your bolts to go into that would be missing from your heads.

Dang, how would I get/install two of those inserts? Would it be easier to just drill out the aluminum brackets and get larger bolts? I'm thinking so.

Nope, they already had the thermactor plugs in the back of the head that match the thread diameter on the front of the head. I was confused as to why the thread diameter on the front of the head was just as large as the back. Both the front and back also have the smaller diametr hole that holds the EGR pipe on the heads. I didn't think the heads I pulled off of the car had a port on each side.
Why would these heads be symmetrical? Are they universal? The spark plugs only go one way so it almost seems as such.

Yes the heads are universal, no rights or lefts. That would cost too much for OEM production.
